ORGANOLEPTIC, HARVEST 2010
The result is a medium-intensity oil. The color is green-tinged, luminous gold with a fruity scent of green olives. Upon sampling, it initially opens with a taste of fresh almond, followed by a slightly pungent but pleasant taste of artichoke and finishes with a spicy taste.
Taste it all by itself, with good bread from a wood‐fired oven, or in a small, round‐bowled glass to appreciate its color, clarity, intensity, and lingering flavors.
It is best enjoyed with traditional ethnic and mixed‐ethnic Mediterranean dishes.
When young, serve it with legumes, vegetables, and red meats; if consumed more than 12 twelve months from its harvest date, it is best with lighter dishes of Italian and international traditions. It is suitable for long‐term storage if stored at a constant temperature, away from light and heat sources.
